Oatmeal Pancakes
1 1/2 cup quick cooking rolled oats
2 cups milk
1/2 cup whole wheat flour
1/2 cup all purpose flour
1 tbsp brown sugar
1 tbsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
2 eggs, beaten
1/4 cup butter, melted or coconut oil
In a large bowl combine oats and milk, let stand for 5 minutes. In another bowl mix together the flours, sugar, baking powder, salt, cinnamon. Add to the oat mixture, mix in butter (can substitute for coconut oil) and the whisked eggs.
Heat a large pan while melting some butter and place about 1/4 cup of the mixture per pancake into skillet. Cook 3-4 minutes until puffed and golden.
Best topped with some maple syrup and fresh fruit and yogurt. They will keep you energized all day long.
I have never tried baking grapefruit before! They look so plump and juicy. YUM!
