American Style Breakfast Pancakes

Sometimes you wake up and all you want is some pancakes. No eggs, no granola, not even leftovers from last night's dinner- pancakes it must be. My ever favourite pancakes are my famous buttermik pancakes (I wrote about them here) because they are so fluffy and perfect. Unfortunately buttermilk is not a staple in my kitchen and I do not always have it in my fridge, so I tried to find a recipe that would give me a fluffy pancake without the buttermilk.
I found a very easy recipe by Jamie Oliver, you only use 1 cup of flour, 1 cup milk, 1 egg, a pinch of salt and a grated pear or apple.
Even though it took me minutes to prepare those I did not find them very fluffy at all and if you left them to sanck on, few hours later they were even tougher. There was something missing in them- butter, definitely and some baking powder maybe?As much as I love Jamie, these pancakes I do not.
I continued my research and found this recipe for American Style Pancakes by Nigella Lawson and they turned out so amazing. I will make them very often. She suggests serving them with bacon, and that is exactly what I will do for breakfast this weekend. You can also add bananas or blueberries to them or even chocolate chips for a sweet tooth. I love them with maple syrup and some yogurt or plain yogurt with honey.
Try them and you will not be disappointed.
American Style Pancakes
Nigella Lawson
225g plain flour
1 tablespoon baking powder
Pinch of salt
1 teaspoon sugar
2 large eggs, beaten
30g butter, melted and cooled
300ml milk
butter for frying

The easiest way is to put all the ingredients in a blender and blend until smooth. Otherwise, beat the eggs first, add the milk and the melted (but cooled) butter, next add the flour with the baking powder and 1 tablespoon of sugar. Mix until well incorporated and using a soup ladle pour onto a hot pan with some melted butter on it. I usually lower the heat to medium when the pan is hot, to prevent butter from burning and smoke all over your house. I do love pancakes but I do not want to smell like them all day long.

DeleteGorgeous phots, yes we love these too - have you tried separating the eggs and whisking the whites into stiff peaks then folding them into the batter? - makes then a tad lighter, spongey :)
