Almond, Walnut and Coconut Granola





One of the Christmas gifts to myself was the Kinfolk Table cookbook which I noticed one day at the bookstore and could not forget about. Gorgeous photography, recipes from people who contributed to the Kinfolk magazine all focused on cooking delicious foods to share with friends and family, because food tastes best when shared and savoured with stories and laughter. This book is so special, as each recipe comes from a different person and I am sure they shared one of their best recipes, which you know will be wonderful. It is to be cherished and placed on your coffee table, because it is simply a piece of art!




One of the recipes in the book instantly transformed me to a warmer place, where time does not fly and we have time to enjoy simple things. Because what does not taste better than fresh fruit kissed by the sun and still warm when you eat it outside without having to rush anywhere? Oh these are the dreamy moments, especially hard when you remember those times in the midst of this cold bitter winter. Last year at this time I was enjoying the sun, ocean and delicious foods in Mexico, Cancun, San Miguel de Allende and few other places of this beautiful country. Today I warm myself up with the memory of this trip and homemade granola and the hope of going back soon.





I definitely crave for the warmth, sun and passion of Mexico, the long nights and the sounds of salsa, when having to withstand this really brutal winter this year. Who wants to go outside when it is minus 23 outside? Really? In few moths the summer will be here again and next winter I will be in Mexico again. Soon, this winter will be a long forgotten distant memory.

Please take your time to make this granola because it is so delicious that it will satisfy your craving even as a snack anytime of the day- you can have it with regular milk or almond milk and some extra honey or maple syrup, add chunks of dark chocolate or dried fruits. You can really use any nuts in this recipe, whatever you fancy. If you like raisins or any dried fruits add it at the end, because baking it will dry it out. I added walnuts to the recipe because I love the taste of roasted walnuts and its earthiness.






Almond, Walnut and Coconut Granola

3 cups whole rolled oats
1 cup whole raw almonds, chopped coarsely
1/3 cup chopped walnuts
1/2 cup unsweetened shredded coconut
1/2 teaspoon cinnamon
1/3 cup vegetable oil
1/3 cup honey
1/4 cup fresh orange juice
1 teaspoon vanilla extract


Preheat the oven to 300 F/150 C and position the rack in the centre of the oven.

Combine the oats, almonds, walnuts, coconut and cinnamon in a large bowl. In a separate bowl combine the oil, honey, orange juice and vanilla and add this to the oat mixture until combined.

Spread the granola on a baking sheet and bake for 45-60 minutes stirring every 15 minutes until golden and dry. It can be stored at room temperature for 2 weeks or frozen for 4 weeks.
