Blue Cheese Stack And Becoming a Minimalist?

"Real Happiness Is Desiring What We Already Have"

At some point in your life you should be able to know what makes you happy and what you need or do not need. Unfortunately we live in a consumer society and we are manipulated to consume more than we need, affecting our own health and earth in the process. From very early days we are expected to do certain things and not allowed to do others. We should all go to university, get married, stay married, buy a house, make lots of money to buy even a bigger house, renovate it completely and be happy spending more money in the malls. I find it very tiring. It seems that the need to buy something is not mine anymore, it is because something is on sale, or it is a great deal, will make a good gift for “someone” etc. The same goes for relationships. Just as we collect all these little things in our houses that make us feel better, we stick to relationships that do not give us anything. We keep in touch with people who take but are not able to give anything. They themselves are consumers thinking this brings them real happiness, but when it comes to giving, they restrain themselves and they become really unhappy and sad inside. Life is definitely too short to go through it sad and unhappy, thinking we are wasting our chances, do not have friends, or cannot find love. Well, if you stick to these relationships that do not bring anything into your life, or do not look for new opportunities, that is exactly what will happen.
We all seem so busy all the time it seems. Why is it so difficult to find few quiet moments to spend time just on our own not rushing anywhere? I overheard once someone talking about a person they knew, and that they decided to quit their job to travel for a year. The comment was that they were so crazy and irresponsible, how could they leave the perfect well paying job to do something so not important! Wow. I was in awe. This is the best way to find what it is that will really make you happy. This person will be so happy in his life, because he does not listen to what he should be doing but listens to himself instead to find what it is that he truly wants to do. These people are not afraid of change, the do not judge and they forgive and move on.

I suggest the cleaning process starts in your fridge! Skip buying your groceries for few days when you think you have nothing to eat. You will be surprised what you can whip up. Throw out these expired ingredients that you will never use. Save food. Eat less. Fell better. After all, you are what you eat, say and think! I started with a piece of blue cheese that was on the verge of expiry and even though I love it I find it hard to incorporate it into my cooking (I am the only fan in my household) However, I recently came across a recipe that looked and sounded irresistible- I simply had to try it.

BLUE CHEESE STACK (Smitten Kitchen)

1 head iceberg lettuce
1/2 cup blue cheese
1/4 cup fresh chives
1/3 cup diced radishes
2 celery stalks chopped

Dressing

1/2 cup shaken buttermilk or natural yogurt
1/3 cup mayonnaise
1 tablespoon lemon juice
1/2 teaspoon Worcestershire sauce
1 small garlic clove
salt and pepper to taste
Blue cheese to crumble on top, bacon bits are optional.

Make the dressing by combining all the ingredients in a bowl. Slice the lettuce in quite large rounds, top with chopped radishes, chives, celery and blue cheese. Pour the dressing on top- dig in!

I also used some blue cheese to make pizza- with pears, walnuts and some cilantro-lime sauce for dipping. A little piece of heaven! :)
