Why Not Waffles?












Waffles...who does not love them? With jam, chocolate, fruit, whipped cream.....When I was a kid waffles were a special treat for me. Usually a summer treat, decadent and delicious, even better after a long day of sightseeing or swimming. Crunchy with whipped cream and chocolate plus strawberries..this was my favourite treat.
Since I made waffles at home for the first time I never bought them frozen again. They are really easy to make, as long as you have a crucial piece of equipment- a waffle iron.
Here is a recipe for Basic Waffles, a little easier than their Belgian friend.




BASIC WAFFLES (makes about 12)

Whisk together:
1 and 3 /4 cups all purpose flour
1 tablespoon baking powder
1 tablespoon sugar
1/2 teaspoon salt


Whisk in another bowl:
3 eggs
4 to 16 tablespoons butter (unsalted)
1 1/2 cups milk

Add your wet ingredients to the dry ones and mix in carefully. It will look a bit like muffin batter.Soon about half a cup of the batter into the hot iron and cook until golden and crispy. Serve with maple syrup and fruit or my strawberry-yogurt sauce.

STRAWBERRY YOGURT SAUCE
About 15 strawberries, a splash of vanilla, 1 tablespoon of sugar and half a cup of plain yogurt.
Blend and spoon over your waffles.
