Summer Berry and Peach Cobbler



Yesterday I had the biggest craving for a fruit pie or something resembling one. I had some peaches and blueberries and I remembered that I was out of ice cream. So after putting my pie in the oven I rushed over for a tub, because this has to be eaten with ice cream.

It turned out really well. Lemony peaches with blueberries and raspberries, melting in your mouth with the crunch of the sweet cobbler crust and a scoop of ice cream- simply perfect on a warm summer day.

SUMMER BERRY AND PEACH COBBLER

3 Ripe Peaches, bigger chunks
250 g blueberries
150 g raspberries
1 apple, chopped
1 tablespoon sugar
1 tablespoon flour
Juice of 1 lemon

Crust

150 g flour
2 teaspoons baking powder
1 big tablespoon sugar
80 g butter
145 ml natural yogurt
Pinch of salt

Heat the over to 200F (380C) Drop the fruit into an ovenproof dish, mix well with the lemon juice, sugar and flour.

For the cobbler mix the flour with sugar, baking powder, salt and butter until it resembles a crumble. Add yogurt at the end and mix it in. It will resemble a bit sticky dough. Now, tear off walnut pieces and flatten them into disks, cover the fruit with the disks completely, sprinkle with sugar and bake for about 25 minutes.

This recipe is good for 4 so if you have a bigger crowd make it a double because they will be asking for seconds!
