Christine's Pulled Pork with Red Bacon Slaw



It seems that I am in the mood for pork recently. And I have not made pulled pork before so it is time to try it. I slow cooked it before but did not actually tear it into pieces. I got inspired by my friend the other day and decided to cook it. Slow cooking in the summer seems perfect as well, because you do not have to use your oven and you can leave the house and enjoy this gorgeous weather while your dinner is literally cooking by itself.





What you need:

1 pork loin
1 jar of any barbecue sauce
few splashes of Worcestshire sauce
half a large can of tomatoes (blended until smooth)
two bay leaves
1 spring of thyme
2 chipotle peppers (canned) with 2 tablespoon of the sauce they are in

Just put all your ingredients into the slow cooker and leave it to cook for at least 6- 8 hours, stirring once in a while. When you put a fork in the meat and it falls apart it means it is ready. Take out pieces from the sauce, break into small pieces and mix it with as much of the sauce as you want. Put on some nice fresh bread with melted cheese and enjoy.....

I like to eat it with coleslaw. It gives it a nice crunch to the tenderness of the meat.



















What you need for it:

1 cup cabbage
2 green onions
half a cup of red and green pepper
2 slices of pancetta (fried and chopped)
1 tablespoon sunflower seeds
Dressing

1/4 cup mayonnaise or natural yogurt
3 tablespoons red wine vinegar
1 teaspoon sugar
Salt and freshly ground black pepper

Slice cabbage and the peppers thinly, toss with chopped pancetta, sunflower seeds and green onions and add the dressing!
