Hearty Barley Soup


This soup is quite popular in Poland and it is perfect for cooler, autumn days. It is hearty and it makes you feel good. It is really two meals in one! Broth that will warm you up, meatballs with vegetables and barely will leave you happy and satisfied. It is enough to serve it with some toast or sandwiches. Yummy.  


Barley Meatball Soup  

 12 cups chicken broth 
 2 cups cooked pearl barley 
Around 12 small Swedish meatballs (I used frozen PC Swedish meatballs) 
2 carrots 
2 parsnips 
4 potatoes 
salt and pepper 
Some parsley with stems and thyme 
3 slices of bacon













Start by cooking your vegetables with bacon, parsley and thyme in the broth. Remove them when they are almost soft and discard thyme and parsley. Add barley, and meatballs (cooked in the oven earlier) Chop the veggies, add to soup, season with salt and pepper and some maggi (I love that spice, perfect for seasoning soups) Serve with some toast or grilled cheese.
