Weekend Perfect Cinnamon Coffee Cake




I have made few coffee cakes in my cooking career ;) so far but this one was one of the best. I used yogurt instead of sour cream, which made the cake moist and perfect with a cup of coffee. It is not too sweet but the layer of brown sugar, cinnamon, hazelnuts and almonds elevated it to my levels of deliciousness....
Try it if you like baking and this one will stay in your home for a while.





Cinnamon Coffee Cake
Cake
1 cup butter
1 cup sugar
2 beaten eggs
1 tsp vanilla
1 cup yogurt
1 tsp baking soda
2 cups all purpose flour
1 tsp baking powder
half a tsp salt
For Streusel
1/2 cup brown sugar
1/2 cup chopped roasted hazelnuts and almonds
1 tbsp cinnamon

Preheat your oven to 350F. Butter and flour a 9 inch bundt pan. Combine all your streusel ingredients and set aside.
In a bowl beat eggs with sugar and butter until creamy, add vanilla.
In another bowl combine yogurt with baking powder.
In a third bowl combine flour, baking powder and salt.
Add 1/4th of the flour mixture alternating with the yogurt, make sure to end with adding the dry ingredients. Beat until smooth and transfer half of it to the bundt pan. Sprinkle with half of the streusel. Add the rest of the dough and finish with the streusel.
Bake for 45 min and check with the knife, if it comes out clean it is ready.
