Polish Leczo

This is a very quick and delicious dish that will make you happy, I promise. All you need is few vegetables and some good quality sausage (polish kielbasa of course) and one pot and you can have a meal for at least two days.

It is best served with potatoes, but plain white rice will work as well as some tortillas.

You need to start with chopping the onion an sausage and frying it for few minutes with some olive oil until the onions soften. After that add your peppers, zucchini and tomatoes at the end. Season with salt, pepper, sugar and tomato paste. A little bit of sugar really does wonders here. It makes the dish tastier and takes away the acidity of the veggies. The same happens when you add some brown sugar to tomato sauce. Try it and you will be surprised with the results.

2 sausages
half an onion
2 peppers red or yellow
1 large zucchini or 2 small
2 tomatoes
3 teaspoons tomato paste
2 teaspoons sugar
salt and pepper
parsley (optional)
