Cinnamon Walnut Coffee Cake




Coffee Cakes are one of my favourite cakes to bake because they are not too sweet and make for a perfect snack at anytime of the day. Still warm on a rainy day with a cup of coffee.....delicious! Here is a recipe from Nigellas KITCHEN- I substituted pecans with walnuts and toasted them for some extra crunch and flavour.

Cinnamon Walnut Coffee Cake
Cake
300g plain flour
1 teaspoon baking powder
1 teaspoon baking soda
125g unsalted butter
150g sugar
2 eggs
250ml sour cream
Walnut Filling
75g flour
30g unsalted butter
1 teaspoon ground cinnamon
150g walnuts
152ml maple syrup

Make the filling for the cake by mixing together flour, butter and cinnamon and adding walnuts when the mixture looks like crumble.
For the cake
1.       Mix together flour, baking powder and baking soda.
2.       Cream the butter and sugar then add 1 egg and 1 tablespoon of the flour mixture, then another egg and flour mixture. Finally add the remaining flour mixture and sour cream at the end.
Bake for 40 min in 180 Celsius degrees.
