Tomatoes With Brie

 
 
Today I had a very delicious and satisfying lunch. The best part was that it was with tomatoes and basil from my garden! Nothing beats the taste.

 
This was such a great and a quick lunch. All you need is:
 
some bread or English muffin
some brie cheese
1 tomato
1 tablespoon olive oil
bunch of fresh basil
salt and pepper
 
 
 
Toast the bread. Warm a pan on the stove, add some olive oil, chopped tomato, chopped basil, salt and pepper. Warm up until the tomatoes are almost falling apart and some of the juices have released.
Right away slather as much as you want on the cheese topped bread, the cheese will melt under the warm tomatoes creating a mini heaven.
 
 
Serve with a salad if you wish!
