Kitchen Diaries and The BEST Lime Tart
This recipe comes from one of my favourite food writers- Nigel Slater. The Kitchen Diaries are addictive. If you love reading about food you will be absolutely in love with this book. He says that what he loves most about cooking is the sticky parts, crust on the cake, burnt pieces of bacon stuck to the pan (gravy material), wine bubbling with roasted chicken pieces you can wipe off with pieces of fresh bread. Really, aren't the textures addictive. Smooth ice cream, whipped cream, fluffy potatoes or crispy fries. Instantly I want to cook and eat, I want to enjoy every bite.....I also love how casual he is, some days he just writes about eating plain rice, because his meal was so rich the day before. But even that seems rich.
Rice is cooked with cardamon pods, a piece of cinnamon, served with some fresh greens. Even simple is extraordinary when Nigel writes about it.
Every recipe I tried so far is extraordinary. Lentils cooked with fresh sausages, salami and tomatoes (as on the cover of the book). Curry spiced chicken legs. Rice with chorizo and veggies.
The lime tart "had me at hello" Of course, if you want to make your own crust go ahead, I have been a little more time challenged recently, so I used a store bought one, as you can see on the attached picture. But the lime filling is all fresh and smooth! It tastes the best with an espresso on a lazy afternoon!It is divine!
BEST LIME TART
1 pie crust- baked
For the filling
5-7 limes- 180 ml juice
lime zest (1 lime)
lime zest (1 lime)
6 eggs
250g sugar (white, granulated)
175 ml heavy cream (whipping)
Preheat the oven to 150 C. Mix the lime juice with eggs and sugar, make sure not to overbeat, just use a whisk and make sure it is not too frothy. Add the cream. Pour on top of the crust and bake for about 50min.
Serve as soon as it cools down.
I was thinking of serving it with whipped cream but really, it is so rich and complex and just beautiful that there is no need for anything else. Just good coffee and company to share it with.
