Time For Plums- Plum Cake
This is an easy, quick dessert that you can put together in minutes. The cake itself is fluffy, you feel as if you were biting into a cloud and the plum is juicy, beautifully complimenting the rest of the cake.
Plum cake is quite popular in Poland, I have not seen too many plum desserts here in Canada. I love that the cake is not too sweet and it goes so well with an afternoon coffee.
Fluffy Plum Cake
1.5 glasses of flour- all purpose
1/4 glasses of sugar
125 g butter
200 ml milk
2 eggs
1/2 teaspoons baking powder
3 tablespoons cream of wheat
1 tablespoon white vinegar
12 plums
some icing sugar for dusting
Beat butter with eggs until fluffy. In a separate bowl mix flour, baking powder and the cream of wheat. Add to the butter mixture in three additions still beating. Slowly add milk and vinegar. Pour into the prepared pan and place the plums, skin down (it is important so the juice stays in the plum and does not dry it out)
Bake in 350F for 60 minutes, checking 15 min before with a fork if ready.
I promise you, biting into this fluffy cake with a piece of a juicy plum will satisfy any tooth.

mmm this sounds divine!
ReplyDeleteI've notice the lack of plum in north american desserts too.
In Asia we have plum candy and dried plums and there is plum wine in Japan.
Also plum related, have you tried Gelato della Prugna (plum gelato)?
Its so light and refreshing.
thanks cinnamin! :)
ReplyDeleteWe like to use plums and alcohol together as well.
Also, dried prunes covered in chocolate are very popular in Poland.
I have not tried plum gelato! Where can I get it?
